Getting the best from your fish

Remember, eating fish regularly helps you to keep healthy. And the fresher the better! If it looks good it will do you good. My wet fish is guaranted fresh and never previously frozen.

Why not give it a try? Be bold, be adventurous! Try something you haven’t experienced before. Fish is an excellent source of protein, and it’s packed with essential vitamins and minerals. And white fish such as cod, haddock and plaice are low in fat.

Poach, bake or grill them and they’re even healthier! But not all fat is bad for you. Oily fish like herring and mackerel are rich in Omega 3 fatty acids which, amongst many other things, help to lower your risk of heart disease.

How much fish should we be eating? The Food Standards Agency (FSA) recommends at least 2 portions of fish a week, to include 1 portion of oily fish.

My top tips for looking after your fish

I supply fish caught on small boats from some of the cleanest waters in Britain. Fishing off the North Devon coast is sustainable and has low impact on the environment. My wet fish is guaranteed fresh and has never been frozen.

Nearly all my fish comes from the Fishermen’s Co-operative at Appledore. I specialize in local fish that hasn’t travelled round the world. It’s best, of course, to eat it on the day you buy it. But you can store it for several days if you follow these guidelines:

When you buy it, don’t tie up the bag – fish needs to breathe.

When you get your fish home, rinse it in cold water and pat it dry with kitchen paper.

Store it between two plates, cover with clingfilm pricked with a fork.

Freezing your fish

Rinse and dry your fish as I’ve mentioned above. Wrap it tightly in clingfilm. If you’re freezing fillets in pairs, keep the skins on the outside to avoid drying and freezer burn. Freeze your fish quickly as possible – use a fast freeze button if you have one.
